Choose the Operating Model

Home event service

Low fixed overhead, with major food-law and transport questions to resolve.

Pop-up or catering

Event-driven demand with setup, travel, power, and weather exposure.

Cart or kiosk

Smaller footprint and focused menu; location economics dominate.

Truck or trailer

Mobile reach with vehicle, generator, water, ventilation, and permit complexity.

Storefront

Brand control and capacity with lease, labor, utilities, and seasonality risk.

Existing-business add-on

Shared traffic and overhead; must fit the existing kitchen and service flow.

Validate Before You Build

  • Define the target customer and service occasion.
  • Observe direct and adjacent dessert competition.
  • Test a narrow menu at permitted events or through an approved kitchen.
  • Measure paid demand, serving time, queue abandonment, waste, and repeat intent.
  • Set a time and money cap for validation before signing long commitments.

The Operating System

  • Menu scope and ingredient storage
  • Machine capacity and recovery
  • Location, mobile setup, power, water, sanitation, and refrigeration
  • Labor, training, allergen control, insurance, and permits
  • Pricing, cost per serving, throughput, packaging, and waste
  • Marketing, events, seasonality, maintenance, and emergency response

Launch Checklist

  • Confirm the business model and customer
  • Obtain local regulatory guidance
  • Model startup, recurring, and per-serving costs
  • Verify equipment, power, water, refrigeration, and transport
  • Document recipes, portions, allergens, cleaning, and opening/closing procedures
  • Run a controlled service test before a full launch
