Basic Rolled Ice Cream Recipe
A small-batch starting formula for learning layer thickness, timing, and scraper technique on a deeply chilled metal pan.

Ingredients
- 1 cup (240 ml) cold heavy cream
- 1/3 cup (100 g) sweetened condensed milk
- 1/2 teaspoon vanilla extract
- Small pinch of fine salt
Equipment
- Freezer-safe rimmed stainless-steel sheet pan or purpose-built freezer tray
- Two straight-edged food-safe scrapers
- Measuring cup and whisk
- Cold serving cups
Instructions
- Freeze the clean metal pan on a level shelf for at least four hours; overnight is more dependable.
- Whisk the cold cream, condensed milk, vanilla, and salt until fully combined. Do not whip.
- Keep most of the base refrigerated. Pour roughly 1/2 cup onto the frozen pan.
- Spread rapidly into a thin, even rectangle—about 1/8 inch (3 mm) is a useful starting target, not a universal rule.
- Return the pan to the freezer if the layer does not firm promptly.
- Working from one edge, hold a scraper around 45 degrees and push beneath the sheet with steady pressure.
- Transfer each roll immediately and serve.
Flavor Variations
Add only a small amount during early attempts: finely crushed sandwich cookie, thin berry puree, cocoa dissolved into the base, or nut butter. Each changes freezing behavior.
Troubleshooting
- Smears instead of rolling: refreeze the pan and use a thinner pour.
- Snaps or crumbles: shorten freezing or slightly warm the scraper edge with your hand.
- Rolls flatten in the cup: chill the cups and serve faster.
- Mix-ins tear the sheet: chop smaller or reduce the quantity.
Storage and Nutrition Notes
